What is the difficulty level to change merc impeller? Volvo looks like it is easy to access vs merc

I can't speak for other models but on my 502 it's really simple. Here's a good video that shows it, looks identical to mine. Only thing I do differently, is instead of using grease on the impeller I use dish soap to lubricate it on it's first dry startup. If you can find your pump and verify that you have access to the side and rear to pull the bolts out it should be easy. In this video they replace the entire impeller housing, which runs about $60-65 for parts on Amazon. If you just get the impeller and o-rings its more like $30-35.

Mine looks same as your so not hard at all.....except their is no space in my boat. It is down below a ledge....so I don’t know how anyone can get to it

Well she's tucked away for her winter nap... I will miss her terribly as our first summer with her was awesome! She's safe from the elements and looking forward to our return in the spring!

So I get there and start talking to the guy Mike.
Mike: oh, another cobalt. I got a blue one here.
Me: does it have a yellow stripe ?
Mike: yes, it's got a yellow one along the bottom
Me: um, I think I know that guy. Did he put like a case of dryer sheets all over ?

Me: just make sure my boats in front of his.

Y'all must have a bunch of sissy mice up there. I open the hood on one of my trader vehicles yesterday and they had frickin shredded the dryer sheets I put in and used them in their nest! (grr) Thankfully the little bugger's didn't chew any wires this time. MAN they are bad this year!
