Is there a way to upgrade a 350 to a 380 output or are they different engines

the Volvo Penta 350 has a smaller displacement than the 380 5.3 L vs 6.2 L, so yes they are different the 380 and 430 are both 6.2 but calibrated for different output.

Your welcome... There was a mention on here somewhere that changing the 380 to a 430 is mostly theoretical and can't really be done after the fact do to factory constraints etc.

The biggest challenge is changing the ECU on the Volvo Penta engines. They're quite expensive, and dealers won't (or can't) flash firmware for a higher output version of an engine onto a low output ECU. I keep waiting for someone to hack the ECU and offer aftermarket upgrades (a simple reflash with no other parts would change my V8-225 to a V8-300), but nothing so far.
