When we bought our first boat, I watched and “learned” everything the tech’s did. (I still do that today with any new procedures). In fact I did this with our engine pull last summer. Watched and assisted for most of it.
Come fall, you’ll be surprised how easy it is to winterize.
Learn it once and you’ll not only know your Boat intimately, but you’ll also know how to do it yourself in the future....plus you can recognize scams. It’s well worth it.
Marinas (actually any industry) love to take advantage of consumer ignorance. I posted about this last fall. Check this thread out...

Judd. Without a impeller change which I recommend to any new used boat owner to do there first season. They will be around $300.00
It's really easy to do And like A7 it's a good thing to do. With common sense and us and utube you can do this and it's well worth it. The Volvo impeller takes less then 30 minutes. 4 bolts and replace a rubber bump stop that prob melted and turned to goo.

Aslan makes a good point - changing oil in the fall rather than the spring ensures that you have clean oil without any organic acids or whatnot from combustion sitting in the block over winter.

I thought the same way with my first new to me boat. I had no idea when the boat had be serviced last. So I bought tools that I would need and ordered all the parts. Then with the help of YouTube I changed all the fluids and filters. Pulled the drive, changed the gimbal bearing, replaced all the bellows and the shift cable. Now I knew the age of everything and going forward knew when to service everything. My shop gave me a price of over $1000. I was able to find some good deals and ended up spending under $500.

So lets get a list together of what to change on a new to you boat and maybe what you change yearly:
engine oil
engine oil filter
drive oil
fuel filter??
impeller

I do the impeller every other year. Everything else every fall. And check all the fluid levels regularly

Yes fuel/water separator every year. Impeller every other. But seeing that you just bought the boat do it this year for a starting base point.

called back and asked more questions and that price was basically just the engine and drive oil. If they did impeller, it was more.. they would check it and the water pump though.
Called somewhere else and the same thing was only $250 from them.

Wow! That's just crazy.
Even $250 is a lot for that. I think my guy will drive to my house and swap out oil for half that.

Here's what I got done last fall.
And he does it in my driveway.
PACKAGE THREE
Drain & Flush all water from engine
Fog engine & Stabilize fuel
Change fuel filter if applicable (add $13.50)
Top off all fluids
Change oil & filter
Change gear lube or transmission fluid
Grease all lube points
Pull Drive (check & grease gimble bearing & u-joints)
4 CYLINDERS, $320.00
6 CYLINDERS, $336.00
8 CYLINDERS, $348.00
