I wonder if my 240 tank has a similar 20% left when the gas gauge is showing empty? I know that the gas gauge shows different readings while I’m on plane as versus idling. I would need to verify, but I think the gauge reads higher on plane than it does just sitting on the water. It is a bit disconcerting.

You can possibly calculate it without having to pull the sender and physically measure based on how much it takes to 'fill' it from any given gauge indication (caveat - see below)
e.g. for my 50 gal tank, the previous full range from 'E' to 'F' spanned 40 gals with 10 gal reserve ; now with the longer sender it would be 45 gals with 5 reserve. So filling from say, 1/2 on the gauge would require 22.5 gals, vs 20 before.

Well unfortunately that is a fundamental issue with a float sensor in a boat - same thing as if you parked your car on a steep hill.
If it's similar to mine, the sender is actually towards the rear of the tank - that would mean when the bow is higher up, it would show a higher level than if level.
This new sensor is still float, so encumbered by the same nuance.
That's what makes the system my friend designed so attractive as it does not rely on a physical sensor and so un-affected by 'level' (in the true definition of the word 'level') - I'll have to keep working on him
