Greetings:
We have a 2020 R-5 and am still in the "brake-in stage" for the Volvo-Penta engine.
So far so good. We came from the 2003 Model 226 which was a great boat.

On the port side near the rear transom is an access fitting which
will require an Allen wrench/driver for access. All I can find on this
is it is for water fill, presumably for boats with a transom shower or optional
sink in the head. The boat has only the porta-pot with pump out feature.
There is a connecting hose inside the engine compartment connected to
what appears to be a small reservoir. It appears to me that another line from
that disappears toward the front of the boat.

There is no optional transom shower nor sink on our new boat. And I don't think Cobalt
would fit all R-5 with this unless a water system was ordered. Cobalt doesn't know why
it is there leaving me to think they started a water system build on the boat and
later changed it up.

Do I have this all wrong? Anyone see anything similar?

Picture? Sure it isn't the fuel tank vent? I seem to recall something similar on our R5 and will have a look next time...

That sure sounds like it's the no charge water prep option to me. I like shinny things! It's just another thing to polish.

Fuel vent?

I agree.
Sounds like someone accidentally installed the prep for a water system. Once the fill hole is drilled in the gunwale, it’s done. Is the pump in there also?

It can't be a fuel vent as it would not be "capped". The water system being accidentally started and then cut seems like the
most reasonable explanation. I just wish that Cobalt would offer the explanation so I could plan on making some use of
this in the future. I will investigate this weekend.
Here is a photo of the boat and the fitting in question is below and rear of the fender clip in, along the
red stripe. As mentioned, it has a hex head to open which I haven't yet done.
There is some hardware in the engine compartment, perhaps a pump not a "tank"?

My R7 has the same thing and was told it is a fuel tank vent. If it's a mistake, they did it on more than one!

Yes.. fuel vent. This is definitely not a water fill or a potential mistake.

Yes, I realize now this is a fuel vent. It goes through some sort of
filtering which is inside the engine compartment. Undoubtedly,
this is to lower any emissions.
The benefit of belonging to this forum cannot be overstated. When the
dealer (and even a call to the factory) can't get the answer, members are
always willing to help. I hope to return the favors!
