Trying to get a handle on all of the maintenance that I should do as part of the upcoming winterization. I plan on doing everything myself so I will probably be asking lots of questions on the forum.

Anyway, I have a 2000 Mercruiser 5.7L EFI. From Mercruiser parts.com the replacement impeller is 47-59362T1. The OEM impeller that I can find does not appear to come with any O-rings. Is it not necessary to replace these at the same time as the impeller? I also assume that I don't need to replace the impeller body unless it looks like it is worn?

Yes and correct. I change my impeller in the spring so it's not all curled up over the winter just sitting in 1 spot.

Good point. I've looked at several videos and will tackle it myselt.
Also, changing oil soon myself.
Any pump recommended?

I would have to do some digging. There's threads on this as well. I have a cheap 12v pump and use a washer hose to connect to the Dipstick and it works great. 2 minutes and all the oil is out. Some use a vacuum manual pump and those work well also. Just run the boat first and get the oil hot. Same with the drive oil. Get it hot. I let mine drain over night so it doesn't matter on mine.

I have a manual oil extractor pump, much like this, and have no complaints:
